Our “PS Sparkling Red” is a real cracker, being a very different blend of 60% Pinot Noir from the Arranmore vineyard and 40% Cabernet Sauvignon from Silcock’s Vineyard at Langhorne Creek. This has produced a wine of deep brick red colour with some purple undercurrents.
The palate is dry yet carries beautiful fruit characteristics typical of good cool climate Pinot, spicy raspberry and plum.
Then there is the subtle undertone of classic leafy cabernet which also contributes to the deep colour. Acid is well balanced and the tiny bead is very lively in the glass. Served at the right temperature of about 10 degrees this wine is the ideal companion to a celebration or simply delicious as an aperitif.
